The BEST way to eat healthy: minimize CARBS, MAXIMIZE Dark Green VEGGIES
2 Bacon slices (optional)
2 Eggs (with or minus the yolks) scrambled with sharp cheddar cheese, salt/pepper to taste
Stir Fried Spinach Side: clean fresh spinach, minced garlic, diced onion, salt, pepper, to taste
To hot frying pan add 1 TBL Olive Oil, diced onions to taste, minced garlic to taste, salt, black and/or red cayenne pepper, to taste.
When onions are cooked clear, then add the moist spinach
1 1/2 C clean drained spinach,but not thoroughly dry.
Put cover over frying pan and simply let the spinach cook down. Then VOILA: it’s all ready!
NOTE: There are many VARIATIONS for this COOKED SPINACH STIR FRY..EXAMPLE: you can add cooked diced potatoes, tumeric, even paprika spices, feta cheese, and even put any EGGS on top (Always add SPINACH LAST) …after eggs, all other ingredients are cooked.
