2 KALE SALAD RECIPES…PLUS CHOOSE TO TURN IT INTO A WREATH

NOTE: The enclosed…two choices for a life healthy KALE SALAD. But the festive option is to turn them into a WREATH..

(Humorous NOTE …as  online news raves continually about how many  Millennials eat kale and avocados…perhaps some will want to top this with an avocado. And perhaps dine wearing Millennial Pink?? Just teasing, as I have a pair of Millennials myself and have sent them this recipe.)

The second is taken from the 2016 Dallas Morning News, which featured a Restaurant which first gave the wreath idea. I simply post a picture with the LINK to that rescipe.

FIRST….THIS IS TRUE: COOK’S HUMOR

I took the above cell picture of the HARMONY KALE SALAD, then sent it to my sister.

She wrote back and told me to tell me that SHE had seen Lincoln’s face in the salad! (??)

So I then wrote her back (this is supposed to be funny) and told her that I had seen the Virgin Mary in the salad and was therefore was going to sell it on Ebay!

HARMONY KALE SALAD

The name HARMONY is due to the ingredients which blend to make it hearty, very interesting and colorful but blend HARMONIOUSLY for a full bodied, may be too salty for some, but different very high quality, GOOD FOR YOU taste.

Up Front: tends to be high in salt so cut back on that to taste (mainly due to the 2 kinds of olives and the addition of salt.

INGREDIENTS:
Washed kale, cut into salad size pieces

Olive Oil

Kalamata Pre-pitted Olives

Green Olives

Feta Cheese

1 Red Bell Pepper: cut into slices

Slivered, Sliced Almonds

Honey (2-3 TBLSP, or barely enough to cover almonds)

Spices (curry, table salt, black pepper) YET for you non exotic spice afficianados,try making it first with out the curry

13 x19 x 1 Baking Pan, teflon or line with aluminum foil

WHAT TO EXPECT: You will divide the following ingredients but bake them in ONE XL large shallow baking pan (mentally) divided into 3 separate sections. OR use 2-3 separate smaller baking pans:
TO DO WITH INGREDIENTS:

BAG O’ KALE. or Better FRESH STALKS: Wash kale,add salt, pepper, to taste, drizzle about 1/2 TBLSP or more, of olive oil. Then toss. Place this on 1/3 of the large shallow pan.

RED PEPPER STRIPS, KALAMATA OLIVES: Mix, add salt,black pepper (but remember that salt is inside the kalamata olives already; so use caution); Place this mixture into a second 1/3 of the baking pan.

SLIVERED ALMONDS: drizzle olive oil, honey, curry then mix all. Set in remaining 1/3 of baking pan. (You may wish to keep this mix separated by wrapping it in a foil, as as it heats, all of the ingredients carmelize, and you will need to use a kitchen scraper to stir,but to remove from bottom of the baking pan) This helps your clean up.

BAKE 7 -8 minutes, Let set,then add (to taste) crumbles of feta cheese

SIDES: In the same oven : Chicken, salmon, oven potato dish, any other

DR T’S BOLD EXPERIMENTATION which she also finds very appetizing and super easy:

Many times I just add a piece of baked salmon,fish, baked potato :

ALL are baked in same oven, but for longer.

Being completely unashamed of potentially being regarded as True Huggerite, who eats nothing but twigs and berries, the writer advises the Kale Leary to EXPERIMENT with this: in the real attempt to minimize poor eating, and fill up with fewer calories. **

And due to all the info online, regarding RED MEAT and added GRAIN HORMONES, GMO’S…this very last season, she did not COMPLETELY give up all red meat, but definitely prefers CHICKEN,SALMON, (after reading about human genetic food engineering)

THUS, I have eaten this very hearty, tasty , above all HEALTHY (except high salt)HARMONY KALE SALAD along with a black bean burger /veggie burger , turkey burger , chicken,salmon placed ON TOP OF IT (one big dining pile) .

AND with a whole grain/whole wheat hamburger I really do enjoy putting a black bean,turkey,veggie burger on that, adding a tiny but of mayonnaise, but then using a thick layer of the ENTIRE KALE SALAD “as is” as the ONLY OTHER “condiments”.

AND it is quick, super healthy, for ON THE GO leaders. Plus, all of this hearty whole grains, HARMONY KALE SALAD ingredients stick with you for quite a LONG TIME.

SO it is extremely satisfying..but again, the ONLY minus is over doing any SALT.

PLUS, as YOU can see in the picture above (minus any faces of Presidents or Bible saintly persons) the colors are so pretty. And look to me like CHRISTMAS. (the hearty HARMONY KALE SALAD is also great in the winter with a bowl of SOUP.

BUT I first discovered it in the summer…so I use salmon,roast chicken OR (becoming one of my favorites to use with this) a black bean burger.

PREHEAT OVEN to 325.

BAKE ALL for 7 minutes

Add table salt and pepper to taste. Be very cautious!
